What’s not to eat?

I’ll tell you what’s not to eat, and that is processed
foods. And I’ll tell you why.

1. It’s not healthy, compared to real, unadulterated food.
2. It’s supporting the industries that want to zombie-ize
you.
3. It adds to the trash, “uniquely American.”
4. It’s often loaded with salt and sugars, not to mention
chemicals.
5. It’s more expensive.

OK, that’s enough for a start. Let’s explore this.

Why isn’t it healthy?

Because much of the natural goodness has been processed
out, that’s one reason. Why are there vitamins and
minerals added? Because they have been stripped out, and
even soulless corporations have to pretend they’re giving
you some semblance of nutrition by adding a pinch.

How does it support industries that want to zombie-ize
you?

Well, duh, you’re buying it: paying for the advertising
and packaging, shelf placement fees, and grotesque CEO
salaries. And in this New World Disorder of unregulated
capitalism for the poor and socialism for the rich, it
supports industries that “self-regulate,” i.e., they are
the entity that oversees their own misdeeds, which means
they go unpunished for their misdeeds.

How does it add to trash?

Let’s use mac ‘n’ cheese in a box as an example.
Typically, you will throw away the box instead of
shredding it and adding it to compost, and the package
that holds the “cheese sauce” is trash, too. It’s a couple
of handfulls of pasta and artifically flavored and colored
not-cheese.

Loaded with salt and sugars, you ask?

Read the damn labels. Many if not most canned tomato
products include some form of sugar. If you want sweet
tomatoes, add your own sugar or grow your own! Tell me
what’s to like in this beverage:

“filtered water, contains less than 2% of natural flavor,
citric acid, sucralose and acesulfame potassium
(sweetener), sodium benzoate and potassium sorbate
(preserve freshness)”

That’s what’s in Fruit2O, a drink you can easily make (and
more healthfully) by adding a squeeze of lemon juice to
water, and sugar if you want.

How is it more expensive?

1. It can make you sick or obese, increasing the cost of
disease care.
2. You are giving an already monopoly even more power over
you.
3. Soon, if not already, you will be paying for trash
removal.
4. The added salts and sugar derivatives can be addictive,
if not downright poisoness.
Do me (and you) a favor: price a bag of macaroni, a half
pound chunk of cheese, and a few green onions. I guarantee
you will get more meals for your money than boxed mac ‘n’
cheese.

As your reward, here’s a homemade “recipe” for mac ‘n’
cheese.

Pasta with cheese

Tiny shell macaroni
Water or broth
Pinch of dry mustard, or more, to taste
Butter or olive oil
Cheese (any kind you like), grated
Green onions, sliced thinly on the diagonal

Cover mac with water or broth, heat and add more
water/broth as the mac expands, stirring until the pasta
is al dente (i.e., no longer crunchy and not mushy)

Add a pinch of dry mustard

Add some butter or olive oil to make it slippery

Grate cheese into the pot, stir

Add sliced onions, stir

Serve with a mixed green salad, green beans or steamed
broccoli florettes, roasted carrots, stewed or sliced
tomatoes.

Need dessert? Try fruit with cream or half and half and
brown sugar.

Got corn?

Honey, get some, now! The price will never go down, EVAH! You probably don’t want to know why, but I’ll tell ya anyway.

Corn is fed to animals, and now it’s being used to make ethanol
instead of animal food. Forget people food.

Now, don’t get me wrong, corn is a wonderful food, even though
the Portuguese consider it only food for pigs–good move, 25 years premature. Portugal 1: U.S.A. 0.

Not to mention, it’s used in high fructose corn syrup which is added to almost every product that comes in a package or bottle. Poison, my friends, poison. Eat a package of jello, or a cup of white sugar instead.

And why would you do that? Because you need the sugar rush? And that would be why? You need to sit down, have a cup of green tea, and ask yourself some questions.
Those questions, eh, the pesky questions.

Do you eat processed foods?

Eat things from a box?

Eat stuff with more than one ingredient? (haha, trick question)

Eat anything with a sweetener?

OK, that’s enough questions. Did you pass? Fail? Who knows?

  • What do you eat every day? Every week? Got plenty? How much is “plenty”?
  • Do you read overseas’ headlines? Did you know there are food famines going on everywhere?
  • Do you understand the petroleum (that’s gasoline, oil) requirements for truckers who bring food to your grocer?
  • Do you have even a 4-foot-square piece of land in which to plant something edible?
  • Do you know how easy it is to “sprout” sprouts–for salads, or for growing?
  • Do you have a backup plan if the power goes out and you can’t use your stove or open your freezer?

Just thinkin’, that’s all…don’t wanna scare ya….srsly

Shall we talk kitteh food?

Sigh, alas, weep, sob, mourn, I no longer have a kitteh. I believe in giving them what they want, and tempting them with what they need. Want? Garlic/oil dressing…Need? Raw chicken. Oh, and praising them for the dead birdie they present, or the live critter they sneak in.

This will be a place for kitteh folks to tell us what their babies love most,  and what they thrive on.

I’m not saying this is a good diet for your kitteh, but I’ve been owned by several who loved all sorts of things:

Orange Julius (ice cream mixed with orange juice)

Italian dressing (loads of garlic with olive oil and vinegar)

Bread (whole grain)

Get the picture? Kittehs like whole food!

I reserve the option to cover your post with litter if you speak ill of kittehs. Srsly.

Git yer grits on

If you’re lucky enough to afford corn products now that they’re being rerouted for ethanol while the world starves, grits are nutritious, not “gummy” like rolled oats, and heftier than cornmeal. Kitteh and I love oatmeal with butter (ok, kitteh likes the butter part best).

Grits Soufflés with Tomato Coulis

Vegetarian Times Issue: April 1, 2007 p.71

Serve these individual soufflés unmolded, as shown, or in ramekins.

Serves 6

Soufflé

1 cup grits, plus extra for dusting
3 cups low-fat milk
2 tsp. baking powder
1/3 lb. steamed asparagus, chopped
1 cup shredded Cheddar cheese
1/2 cup shredded aged Gouda cheese
3 large egg whites plus 1 large egg

Tomato Coulis

2 tsp. garlic oil
1 small onion, chopped (about 1 cup)
1 15-oz. can diced Italian-style tomatoes
1/4 tsp. crushed red pepper

Directions
To make Soufflés: Preheat oven to 375F. Coat 6 8-oz. ramekins with cooking spray, and dust with grits.
Bring grits, milk and baking powder to a boil in pot. Reduce heat to medium and cook 8 minutes, whisking constantly. Cool 5 minutes, then stir in asparagus, cheeses and whole egg.
Beat egg whites with electric mixer until stiff peaks form. Fold into grits mixture. Season with salt and pepper. Divide among prepared ramekins. Bake 25 minutes, or until puffed and golden.
To make Tomato Coulis: Heat oil in pot over medium heat. Add onion, and sauté 6 minutes, or until soft. Add tomatoes and crushed red pepper, and simmer 12 minutes. Season with salt and pepper. Purée in blender until smooth. Unmold soufflés and serve with Tomato Coulis and asparagus spears for garnish, if desired.
